Lentil Carrot Chicken Pockets

We can’t get enough of these Lentil Carrot Chicken Pockets! With four ingredients (thanks to the help of rotisserie chicken and pre-made pie crust) this recipe is so easy and perfect for the holiday season! Our Tots Lentil and Carrot Bowl is packed with protein, fiber, folate, Vitamin A and C and will pair nicely with your rotisserie chicken – providing a complete and satisfying meal for all the kids at your holiday gathering. You may want to make some extra because we’re doubtful the adults will be able to keep their hands off – they’re that good!


1 box of Yummy Spoonfuls Tots Lentil & Carrot (defrosted)

1/4 cup chopped leftover rotisserie chicken

Pie crust (homemade or store bought – we recommend the Immaculate Honestly Delicious Ready-to-Bake pie crust for this recipe as they’re free of preservatives and artificial flavors.)

1 egg and 1 tablespoon of water whisked together (egg wash)


Line a baking sheet with parchment paper

Heat oven to 375°

Mix Yummy Spoonfuls Tots Lentil & Carrot with chopped chicken and set aside

If you are using pre-made pie crust dough or leftover from the freezer defrost or bring to room temp following the directions on the package

Dust surface with flour and roll out dough with a rolling pin or bottle (no fancy gadgets needed)

Cut circles with a round cookie cutter, pasta cutter, or glass

Spoon 1 1⁄2 tsp of the lentil chicken filling to the middle of the cutout dough circle

Cover with another dough circle and press edges firmly. Use a fork to press down for the final seal and fancy finish. Repeat process until you use up all your dough or filling. (You should end up with roughly 10 mini pies).

Gently use a fork or tip of a knife to prick a few holes on top of your mini pie

Lightly brush mini pies with egg wash

Place on lined baking sheet

Bake for 20 minutes or until golden brown
